Buttermilk Substitute

Also called sour milk, is used to give recipes a little zip. Substitute 1 tablespoon of lemon juice or vinegar plus enough whole milk to make 1 cup (let stand 5 minutes before using), OR use 1 cup whole milk plus 1 3/4 teaspoons cream of tartar OR use 1 cup of plain yogurt.

Pancakes are one of those foods that are found cross culturally around the world. They can be found in Egypt as a sweet deep fried treat, in England folded in half with lemon juice and sugar and in the United States stacked high on a plate topped with butter and maple syrup.

Out of butter milk? You can simply create your own. You can substitute 1 cup of butter milk with 1 cup whole milk and a tablespoon of vinegar. You can also substitute 1 cup of butter milk with 2/3 cup of plain yogurt and 1/3 cup whole milk.

Top lemon with the fillets. Sprinkle carrots, dill and parsley evenly over fillets. Top each with 1 teaspoon butter. Fold parchment papers to make packets. Crease the folds but leave enough room for air to circulate. Place plackets on a baking sheet and place in oven. Bake 18 to 22 minutes or until fish is opaque throughout.

When making a spice cake it usually calls for buttermilk. Well, how many of us have buttermilk readily available in our refrigerators? You can quickly make your own. To make one cup of buttermilk use one tablespoon of lemon juice or white vinegar and add enough whole milk to make one cup. Let this mixture stand for about five minutes and you have a buttermilk substitute.

When roasting meats, trim the visible fat from the meat and place meat on a rack in a baking dish with 1-2 centimetres of water. For additional flavour add herbs and wine to the water. Alcohol is harmless when used with heat in cooking.

For breakfast, add some fresh fruit, a sausage link, slice of bacon, an egg or a small cup of low-fat, sugar-free yogurt and you have a meal. If you or your child is diabetic, add at least one protein source with the muffin.

With regard to tips on substituting ingredients, you will find that almost every ingredient can be substituted and will be as close to the original. Sometimes, you may have to use two or three different ingredients to be able to get the taste of the original.

Back to the subject at hand, assuming you have real Southern recipes, you can still wind up with a dish that is not truly Southern if you do not employ Southern cooking techniques. You may produce something that is good but the technique makes it more than good, it makes it special.

Keep in mind we are talking about Southern cooking. Not Chinese or West Coast casseroles. Many vegetables, Southern Style, are cooked considerably longer than most people tend to cook them. Specifically, green beans are cooked until soft and dark green in color. They are not crunchy and bright green. Okra and green tomatoes, are cooked until some burned edges appear and are very crunchy.
